A Summer Feast

On an early morning jaunt to Stockbridge I decided to browse the bookshelves in the Golden Hare book shop at St Stephen Street. The colourful spine of the cookery book ‘Feasts’, by Sabrina Ghayour, stimulated my taste buds.

This is the ideal cookery book with wonderful sharing recipes for gatherings of family or friends. Easy-to-follow recipes incorporating good-quality ingredients with the added healthy option of herbs and spices, which have the highest concentration of antioxidants of any food group.

The recipe below is based upon one of the recipes from the Vegetarian Feasts chapter – a perfect summer salad for sharing or an ideal pairing with char-grilled vegetables.

Peach, Feta and Mint Salad

Serves 2

2 large ripe peaches (pitted and sliced)

1 medium red onion sliced into fine rings

1 tsp crushed chillies (depending on how hot you prefer)

Juice from half a lemon, freshly squeezed

1 tbsp extra virgin olive oil

100 grams of good quality feta cheese, crumbled

Several sprigs of fresh mint (chopped finely)

Salt

Freshly-ground Black pepper

Method

Add the lemon juice, olive oil, salt and black pepper to a mixing bowl and stir gently.  Add peach slices and onion slices – coat well.

Place ingredients on a large serving dish then scatter over the crumbled feta, finely chopped mint and the crushed chillies.
