Dress up and make Saturday night movie night!

This is a funny old time of the year – bonfire night and Halloween are done and dusted and we’re not yet into the merry-go-round of Christmas parties. The secret is to draw the curtains tight and settle down on the sofa with a best friend – the family dog will do nicely – a gripping DVD and a tasty TV supper. It’s the sort of chill out evening the late, much loved actor and family-loving Paul Newman would appreciate. A keen cook, he made his first batch of Newman’s Own dressing in a bathtub, bottling them as gifts for family and friends.

Today, 27 years later, Paul’s dressings and marinades are still made to his original recipes using only the best all-natural ingredients. And they taste just as good with gutsy winter warming dishes as they do with delicate summer salads.

Roasted Chicken & Pepper Salad - no bottle copyWarm Chicken and Pepper Salad with Ciabatta Croutons
Serves 4


Per serving:

434kcals,

21.2g fat,

3.2g saturated fat

For the salad:
3 skinless chicken breasts
1 each red, yellow and orange peppers, deseeded and roughly sliced
6tbsp Newman’s Own Italian Dressing, plus extra to serve
150g green beans
125g baby leaf spinach
Parmesan shavings, to serve

For the croutons:
½ ciabatta loaf
2tbsp olive oil

Method:

  • Heat oven to gas 6 /200⁰C. Place chicken and peppers on a large roasting tray. Drizzle with the dressing and season with salt and pepper. Bake for 25-30 mins, turning the peppers occasionally, until the chicken is cooked through and the peppers are soft.
  • Meanwhile, bring a pan of water to the boil, add the beans, and boil for 3 mins. Drain and plunge into cold water for a minute. Drain again.
  • About 10 minutes before the chicken is cooked, tear the ciabatta into  2cm pieces and  tip onto a baking sheet. Season well with salt and pepper, then drizzle with the oil, mixing with your hands to make sure each piece is evenly coated.  Bake in the oven for 5 mins, until golden.
  • To serve, toss the spinach leaves and beans with a splash of dressing, then place on serving plates. Slice the warm chicken and scatter over the leaves with the roasted peppers and any pan juices. Top with the hot croutons and sprinkle with Parmesan to serve.
